Breakfast Tostadas
Crisp tostadas hold a layer of smashed beans and creamy eggs, creating a sturdy base with plenty of texture. Finish with a splash of bright green or red salsa, Queso Fresco or any toppings you prefer such as Mexican cheese, pickled onions, avocado or jalapeños. It’s a simple, hand-held breakfast with a satisfying crunch.

Ingredients:

SERVINGS: 2 | Start to finish: 15 minutes
2 tostada shells
1 tbsp (15 ml) extra virgin olive oil
2 eggs
1 cup (240 g) canned pinto beans, drained, rinsed and drained again
5 cherry tomatoes (75 g), halved
2 tbsp (20 g) crumbled queso fresco or other Mexican cheese
Cilantro leaves for garnish, optional
2 tbsp (30 ml) salsa verde or red salsa, optional
How to Make This
In a bowl, mash the beans until somewhat spreadable so they don’t roll off the tostada.
Heat the tostada shells per package directions OR heat, 1 at a time, over a very low flame on your gas stove until lightly toasted, about 5-7 seconds on each side. These cook quickly so keep an eye on them! Set aside.
Cook the eggs however you like them.
Spread a thin layer of the beans over each tostada shell, place one egg on each and top with tomatoes and cheese followed by optional cilantro and hot sauce or salsa
