Ingredients

SERVINGS: 4 | Start to finish: 15 minutes
2 ripe avocados, pitted
½ cup (50g) unsweetened cocoa powder
3 pitted Medjool dates, soaked in warm water for 10 minutes and drained
4 tbsp (60ml) unsweetened almond milk
1 tsp (5ml) pure vanilla extract
¼ tsp (1g) sea salt
¼ tsp espresso powder, optional, deepens the chocolate flavor
2 oz (57g) dark chocolate, 70% or higher, melted
How to Make This
Scoop the avocado into a food processor or blender with the cocoa powder, soaked and drained dates, almond milk, vanilla, salt, and espresso powder if you're using it. Blend on high, scraping down the sides once, until it's completely smooth.
Pour in the melted chocolate and blend again until it's glossy. Taste it; add a date if you want it sweeter, adjust the salt if you want it sharper. If the mixture feels too thick, add another tablespoon of almond milk and blend again.
Divide into small jars or ramekins and refrigerate for at least 30 minutes, longer is better because it’s meant to be cold and it gets more firm and turns into true mousse texture the longer it rests.
